Rice Salad

1 cup basmati rice cooked in 1 and 3/4 cup of water ... Cold
1 finely chopped red bell pepper
2 finely chopped tomato
half a cup of chopped parsley
I bunch scallions chopped
1 can black beans drained and rinsed
2 cups of corn, fresh or frozen
1 cup balsamic vinagrette


Mix all of the above together artistically in a large bowl. Chill. Great for a large party or potluck.

Balsamic Vinegrette

I tbs dijon mustard
2 tbs of balsamic vinegar
2 cloves of garlic, crushed, chopped
Italian seasonings, salt and peper
1 cup or so of very good olive oil


Whisk together all the ingredients except for olive oil. Drizzle the olive oil in slowly while whisking... Mixture should be thick... an emulsification.
